We offer 8 different sizes of variety packs, with minimum weights from 10 lb to 160 lbs, with freezer space of only about 1/4 cubic foot to about 4.5 cubic feet. Our Variety Packs consist of 100% Criollo retail cuts: steaks, roasts, fajitas, barbeque, hamburgers and ground. We offer whole animals and individual sides, custom-cut to YOUR individual specifications, and priced by the pound based on dressed weight, PROCESSING FEES INCLUDED. What's so important about the processing fees being included? It's a BIG deal--the expenses associated with creating vaccum-packed cuts of beef include: the harvest fee, meat hanging/aging/cutting fee, by-product disposal fee, and package fee. Typically, processing fees average $2.32 per pound of dressed weight for dry-aged, vacuum-packed, individually-labeled beef such as we are proud to provide our customers. By including all processing fees in our prices, our customers have only 1 variable to consider: the dressed weight of the side or whole they are considering purchasing.
There are no unknowns with our Criollo beef: we DNA test all of our Criollos, when they are calves, to measure their meat's Tenderness and Marbling. These scores are on a scale of 1 to 10. Tenderness scores of 4-6 predict a "pleasant dining experience," and scores of 7 and higher--the coveted "Elite" status--predict fork-tender yumminess. Marbling scores of 4-6 predict a grade of "Choice", with scores of 7 and higher predicting a grade of "Prime." Only Criollos with Tenderness scores of 7 or higher, and Marbling scores of 4 or higher, are used in our meat program. Can you imagine, a freezer-full of dry-aged, flavorful, fork-tender beef?
Average dressed weight is around 450 to 500 lbs, but each animal varies slightly. The yield from our animals from dressed weight to finished product varies depending on what retail cuts of beef are chosen, but is typically around 65%-70%. Factors that affect weight of final retail product include bone-in vs boneless (ribeye, top sirloin, chuck roast, round steak) and if a particular cut is wrapped or turned into ground product. Typically, about half the yield is ground product (92%-94% lean), and about half is individually-wrapped retail cuts.
Wholes are priced at $6.25/lb dressed weight, and include the organ meats & bagged select soup bones, with $800.00 deposit reserving the beef.
Sides are priced at $6.55/lb dressed weight, and include bagged select soup bones, with $400.00 deposit reserving the beef. Organ meats are not included with sides.
All retail cuts are vacuum-packed in heavy mil plastic bags and with custom-printed labels clearly identifying the cut. All ground beef is vacuum-packed in 1 lb chubs in heavy mil plastic. All hamburger patties are vacuum-packed, with dividers, in heavy mil plastic bags. Select soup bones are packed in 3-5 lb bags.
Expected yield of retail cuts of beef from Wholes, based on average dressed weight of 450 lbs, is 295 to 315 lbs of individual cuts; expected yield of retail cuts of beef from sides, based on average dressed weight of 225 lbs, is 145 to 160 lbs of individual cuts.

As an example, if you buy a side of beef, and that side of beef had a dressed weight of 225 lbs, your side of beef would cost 225 x $6.55 = $1,473.75, You could expect, depending on how you had your side processed, 145 to 160 lbs of actual individual cuts of beef, plus select soup bones.
Another example, if you buy a whole beef (2 sides + organ meats), and that beef had a dressed weight of 450 lbs, your whole beef would cost 450 x $6.25 = $2,812.50; you could expect 295 to 315 lbs of actual individual cuts of beef, plus the organ meats (liver, tongue, heart, oxtail), plus 4-5 bags of select soup bones.

Our next shipping date will be Monday, December 9, 2024.
Your Criollo Beef order is delivered to your door in perfect condition. We use plenty of dry ice and a reusable, insulated cooler - a packaging combination that will insure your products arrive frozen and in excellent condition. We ship via FEDEX on Mondays. Our shipping charges for 1 and 2 day deliveries (tan and light tan areas on the map) is $10.00.
In delivery areas requiring 3 or 4 days in the FEDEX system (green and brown areas on the map) : to insure your Criollo Beef order arrives in perfect condition, we must add additional dry ice, and usually a larger shipping container to hold the extra dry ice. Due to the additional dry ice and larger container needed, shipments requiring 3 or 4 days in the FEDEX system will require an additional $25.00 in shipping fees. If you live in the 3 or 4 day FEDEX delivery area (based on delivery zip code), your shipping charges will be increased by $25.00 (from $10.00 to $35.00). You will see this additional $25.00 (if applicable) added for the final order verification.UNFORTUNATELY, WE CANNOT SHIP TO AREAS REQUIRING 5 DAYS DELIVERY, (PUERTO RICO and 2 SMALL AREAS IN NEVADA - ORANGE ON THE MAP), NOR TO HAWAII OR ALASKA.
